IGRECA production facilities at the cutting edge of innovation
A rigorous approach
From the outset, IGRECA's plant design has been based on the concept of "total forward motion".
Each module, corresponding to a key stage in the production process, is independent and partitioned off from the rest of the plant.
The process can be divided into 3 stages, 3 sectors:
- egg storage and breaking room (separation of white and yolk)
- egg white before pasteurization
- pasteurized egg yolk and whole egg
The raw egg enters the factory and follows a linear path, ending up in the opposite, processed state.
To ensure perfect hygiene, these areas are clearly separated.
Partitioned sectors, qualified personnel
Operators pass through the plant via a central gallery. Strict clothing rules (single-use overalls and protective gear) and regulatory washing procedures are in place.
The quality laboratory carries out regular physico-chemical checks, in line with IGRECA's HACCP approach.
Computer-aided production management
The IT tool developed for IGRECA ensures regularity in procedures, constant and rapid monitoring, and the ability to store and archive data.
